We raise 100% grass-fed beef and lamb, produce compost through our North Country Compost service, and collect fresh eggs from hens nourished on our compost-fed pastures. Visitors can also enjoy our scenic walking and ski trails, connecting with the land that sustains us.

How Stress Affects Meat Quality
Glycogen Depletion: Stress triggers the release of hormones like adrenaline and cortisol, which use up the body's glycogen (stored energy).
Disrupted Acidification: Glycogen normally converts to lactic acid after slaughter, a process that lowers the meat's pH. This low pH makes the meat tender, flavorful, and juicy.
Higher pH: With depleted glycogen, less lactic acid is produced, leaving the meat with a higher, less acidic pH.
